ABOUT THE COFFEE / REGION
Don Anibal began working with coffee over 20 years ago, initially focusing on conventional coffee. Three years ago, he transitioned to specialty coffee, dedicating himself to refining his processes.
Finca El Platanar, located at 1,600 MASL, gets its name from the many banana plants growing on the property. Over time, Don Anibal has standardized his methods, including a 22-hour dry cherry fermentation process followed by drying the coffee on patios for up to 15 days, ensuring consistency and quality.
He grows varieties like Bourbon, Maragogipe, and Marsellesa, though he hopes to expand his Bourbon cultivation due to its excellent quality potential. In addition to coffee, Don Anibal maintains a milpa, providing food for his family and diversifying the use of his land.
His dedication highlights the transformation of his farm and his commitment to producing exceptional specialty coffee.
